Vernalization

Vernalization for garlic is the process of exposing it to a prolonged period of cold, typically 6–8 weeks below 40 degrees F to induce bulbing and support reproductive development. Planting garlic cloves in the fall so they can experience natural winter cold. This cold treatment is essential for garlic to develop correctly. Without this cold period, the garlic will not develop properly, and the bulbs will not form correctly. In warmer climates where winter temperatures don’t drop low enough, cloves can be stored in a refrigerator for 40 days to achieve the same effect.
